- 4 scoops vanilla ice cream
- 2 cups cornflakes, crushed
- 1 teaspoon ground cinnamon
- 2 tablespoons granulated sugar
- 2 eggs
- 2 tablespoons milk
- Vegetable oil for frying
- Whipped cream, for serving (optional)
- Honey or chocolate syrup, for drizzling (optional)
- Cherries, for garnish (optional)
Instructions
- Scoop the ice cream into 4 round balls and place them on a baking sheet. Freeze for at least 2 hours or until very firm.
- In a bowl, combine crushed cornflakes, cinnamon, and sugar. Set aside.
- In another bowl, whisk eggs and milk together.
- Roll each frozen ice cream ball in the cornflake mixture, then dip into the egg mixture, and roll again in the cornflake mixture for a double coating.
- Freeze coated ice cream balls for at least 2 more hours or overnight for best results.
- Heat oil in a deep fryer or heavy skillet to 375°F (190°C).
- Fry each ice cream ball for 10-15 seconds until golden brown. Remove immediately and drain on paper towels.
- Serve immediately with whipped cream, honey or chocolate syrup, and cherries if desired.
Notes
- Make sure the ice cream is very frozen before frying to prevent melting.
- You can substitute cornflakes with crushed cookies or graham crackers for a different twist.
- Use a slotted spoon to carefully handle the ice cream while frying.
