Description

Ingredients

For the Greek Chicken Skewers:

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

  • 3 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 3 cloves garlic, minced

  • 1 tablespoon dried oregano

  • 1 teaspoon ground cumin

  • Salt and pepper, to taste

  • Wooden or metal skewers (if using wooden, soak them in water for 30 minutes before grilling)

For the Feta Fries:

  • 4 medium russet potatoes, cut into fries

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • 1/2 teaspoon dried oregano

  • 1/4 cup crumbled feta cheese

  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

  • 1 tablespoon fresh lemon juice (optional, for garnish)


Instructions

Prepare the Greek Chicken Skewers:

  1. Marinate the chicken: In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper. Add the cubed chicken and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours) to let the flavors marinate.

  2. Skewer the chicken: Thread the marinated chicken cubes onto the skewers, packing them tightly together.

  3. Grill the skewers: Preheat your grill or grill pan over medium-high heat. Grill the chicken skewers for about 5-7 minutes per side, or until the chicken is fully cooked (internal temperature should reach 165°F/74°C).

Prepare the Feta Fries:

  1. Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

  2. Make the fries: Cut the potatoes into fries and place them on the prepared baking sheet. Drizzle with olive oil and season with salt, pepper, and dried oregano. Toss the fries to coat evenly.

  3. Bake the fries: Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the fries are golden brown and crispy.
