1 lb ground turkey

1 small onion, diced

2 medium sweet potatoes, peeled and diced (about 4 cups)

1 red bell pepper, diced

1/2 teaspoon paprika

1/2 teaspoon dried thyme

Salt and pepper, to taste

1/4 cup chicken broth (or water)

1 cup shredded mozzarella or cheddar cheese (optional)

1 tablespoon olive oil

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add ground turkey, diced onion, and garlic. Cook until turkey is browned and onion is soft.

Add Veggies & Seasoning: Stir in sweet potatoes, bell pepper, paprika, cumin, thyme, salt, and pepper. Cook for 5–6 minutes, stirring often.

Add Broth: Pour in chicken broth, cover the skillet, and let simmer for another 5 minutes to slightly soften the sweet potatoes.

Transfer to Baking Dish: Pour the mixture into the prepared casserole dish and spread evenly. Top with shredded cheese if using.

Bake: Bake uncovered for 20–25 minutes, or until sweet potatoes are tender and cheese is melted and bubbly.
