Description

Ground Turkey Sweet Potato Casserole is a hearty and healthy meal loaded with lean protein, sweet potatoes, and veggies—all baked together with warm spices and a touch of cheese. It’s easy to make, gluten-free, and full of feel-good flavors that the whole family will love.


Ingredients

  • 1 lb ground turkey

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 medium sweet potatoes, peeled and diced (about 4 cups)

  • 1 red bell pepper, diced

  • 1/2 teaspoon paprika

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon dried thyme

  • Salt and pepper, to taste

  • 1/4 cup chicken broth (or water)

  • 1 cup shredded mozzarella or cheddar cheese (optional)

  • 1 tablespoon olive oil

  • Optional: chopped parsley or green onions for garnish


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add ground turkey, diced onion, and garlic. Cook until turkey is browned and onion is soft.

  3. Add Veggies & Seasoning: Stir in sweet potatoes, bell pepper, paprika, cumin, thyme, salt, and pepper. Cook for 5–6 minutes, stirring often.

  4. Add Broth: Pour in chicken broth, cover the skillet, and let simmer for another 5 minutes to slightly soften the sweet potatoes.

  5. Transfer to Baking Dish: Pour the mixture into the prepared casserole dish and spread evenly. Top with shredded cheese if using.

  6. Bake: Bake uncovered for 20–25 minutes, or until sweet potatoes are tender and cheese is melted and bubbly.

  7. Serve: Let cool slightly, garnish with parsley or green onions, and serve warm.


Notes

  • You can prep this ahead and refrigerate before baking—just add 5–10 minutes to bake time.
