- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 4 cups beef broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup elbow macaroni, uncooked
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium heat until no longer pink. Drain excess fat.
- Add onion, garlic, bell pepper, carrots, and celery. Sauté for 5–7 minutes until vegetables are slightly tender.
- Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, paprika, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add macaroni and cook for another 10–12 minutes, or until pasta is tender.
- Taste and adjust seasonings as needed. Stir in fresh parsley before serving.
- Serve hot with crusty bread or a side salad.
Notes
- Use ground turkey or chicken for a lighter version.
- For make-ahead, cook pasta separately and add just before serving to avoid sogginess.
- Freezes well—cool completely before storing in freezer-safe containers.
