Description

Hamburger Soup with Macaroni, also known as Goulash Soup, is a hearty, comforting dish made with ground beef, vegetables, and elbow macaroni in a flavorful tomato-based broth. It’s an easy one-pot meal perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup elbow macaroni, uncooked
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat until no longer pink. Drain excess fat.
  2. Add onion, garlic, bell pepper, carrots, and celery. Sauté for 5–7 minutes until vegetables are slightly tender.
  3. Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Add macaroni and cook for another 10–12 minutes, or until pasta is tender.
  6. Taste and adjust seasonings as needed. Stir in fresh parsley before serving.
  7. Serve hot with crusty bread or a side salad.

Notes

  • Use ground turkey or chicken for a lighter version.
  • For make-ahead, cook pasta separately and add just before serving to avoid sogginess.
  • Freezes well—cool completely before storing in freezer-safe containers.
