Avocado Mash
- 2 avocados

Sour Cream Sauce
- 170g sour cream or 3/4 cup Greek yogurt
- Zest and juice of 1/2 lime
- 1/2 tsp sugar
Additional
- Salt and pepper to taste
- 8-9 lettuce leaves
- Lemon zest, black pepper, and cilantro for garnish
Instructions
- Marinate the Shrimp: In a bowl, combine the shrimp with 1/3 cup olive oil, the entire packet of taco seasoning, and the juice of 1 lime. Mix well to coat all shrimp evenly and refrigerate for 30 minutes to infuse the flavors.
- Sauté the Shrimp: Heat a skillet over medium heat. Add the marinated shrimp and cook for about 3-4 minutes on each side, until the shrimp are opaque and cooked through. Remove from heat and set aside.
- Prepare the Tomato and Corn Salad: In a mixing bowl, combine the diced cherry tomatoes, finely chopped onion, sweet corn, garlic powder, 2 tablespoons olive oil, and chopped parsley. Stir until well blended and season with salt and pepper to taste.
- Make the Avocado Mash: In a separate bowl, mash the avocados with the juice of half a lime and salt to taste until smooth but slightly chunky for texture.
- Prepare the Sour Cream Sauce: Whisk together sour cream (or Greek yogurt), lime zest, juice of half a lime, and sugar until smooth and creamy. Adjust seasoning if needed.
- Assemble the Lettuce Wraps: Lay out the lettuce leaves and spread a layer of avocado mash on each. Add a spoonful of the tomato and corn salad, followed by a few sautéed shrimp. Drizzle with the sour cream sauce and garnish with lemon zest, freshly cracked black pepper, and cilantro leaves.
