- For the crust:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 6–8 tablespoons ice water
- For the filling:
- 6 cups thinly sliced apples (Granny Smith or Honeycrisp recommended)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1 tablespoon butter (to dot on filling)
- 1 egg (for egg wash)
- 1 tablespoon coarse sugar (optional, for topping)
Instructions
- In a large bowl, combine flour, salt, and sugar for the crust. Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Add ice water one tablespoon at a time, mixing until dough just comes together. Divide into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat oven to 425°F (220°C).
- In a large bowl, mix apples, granulated sugar, brown sugar, cinnamon, nutmeg, salt, flour, and lemon juice. Set aside.
- Roll out one dough disk to fit a 9-inch pie dish. Transfer to dish and trim edges.
- Fill with the apple mixture and dot with butter.
- Roll out the second dough disk and place over the filling. Trim, seal, and crimp edges. Cut slits or make a lattice top.
- Brush top with beaten egg and sprinkle with coarse sugar if desired.
- Bake for 20 minutes at 425°F, then reduce heat to 375°F (190°C) and bake for another 30–35 minutes or until crust is golden and filling is bubbling.
- Cool at room temperature before slicing.

- Place a baking sheet under the pie to catch drips.
