Ingredients

  • For the crust:
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 68 tablespoons ice water
  • For the filling:
  • 6 cups thinly sliced apples (Granny Smith or Honeycrisp recommended)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 tablespoon butter (to dot on filling)
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (optional, for topping)

Instructions

  1. In a large bowl, combine flour, salt, and sugar for the crust. Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  2. Add ice water one tablespoon at a time, mixing until dough just comes together. Divide into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
  3. Preheat oven to 425°F (220°C).
  4. In a large bowl, mix apples, granulated sugar, brown sugar, cinnamon, nutmeg, salt, flour, and lemon juice. Set aside.
  5. Roll out one dough disk to fit a 9-inch pie dish. Transfer to dish and trim edges.
  6. Fill with the apple mixture and dot with butter.
  7. Roll out the second dough disk and place over the filling. Trim, seal, and crimp edges. Cut slits or make a lattice top.
  8. Brush top with beaten egg and sprinkle with coarse sugar if desired.
  9. Bake for 20 minutes at 425°F, then reduce heat to 375°F (190°C) and bake for another 30–35 minutes or until crust is golden and filling is bubbling.
  10. Cool at room temperature before slicing.
