Description

This Honeycrisp Apple Broccoli Salad is a colorful, nutritious salad that combines fresh broccoli, sweet and tart Honeycrisp apples, crunchy sunflower seeds, and a creamy dressing. It’s a light yet satisfying side dish that’s perfect for picnics, potlucks, or a simple family meal!


Ingredients

For the Salad:

  • 4 cups broccoli florets (about 2 cups of chopped broccoli)

  • 2 medium Honeycrisp apples, cored and diced

  • 1/2 cup red onion, finely chopped

  • 1/4 cup sunflower seeds (or your favorite nuts)

  • 1/4 cup dried cranberries or raisins (optional, for extra sweetness)

For the Dressing:

  • 1/2 cup mayonnaise

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon honey (adjust for sweetness)

  • 1/2 teaspoon Dijon mustard

  • Salt and pepper, to taste


Instructions

  1. Prepare the salad ingredients:
    In a large bowl, combine the broccoli florets, diced Honeycrisp apples, chopped red onion, sunflower seeds, and dried cranberries (if using).

  2. Make the dressing:
    In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, and a pinch of salt and pepper until smooth and creamy. Taste the dressing and adjust the sweetness or tanginess by adding more honey or vinegar, if desired.

  3. Combine the salad and dressing:
    Pour the dressing over the salad mixture and toss gently to coat everything evenly.

  4. Chill and serve:
    Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld together. Serve chilled and enjoy!


Notes

  • You can substitute the mayonnaise with Greek yogurt for a lighter dressing.

  • For an extra crunch, try adding chopped walnuts or pecans instead of sunflower seeds.

  • If you don’t have Honeycrisp apples, any sweet and tart apple variety will work, such as Gala or Fuji.

 

  • This salad can be made ahead of time but is best served within 1-2 days to keep the apples fresh.
