Ingredients
For the Salad:
-
4 cups broccoli florets (about 2 cups of chopped broccoli)
-
2 medium Honeycrisp apples, cored and diced
-
1/2 cup red onion, finely chopped
-
1/4 cup sunflower seeds (or your favorite nuts)
-
1/4 cup dried cranberries or raisins (optional, for extra sweetness)
For the Dressing:
-
1/2 cup mayonnaise
-
2 tablespoons apple cider vinegar
-
1 tablespoon honey (adjust for sweetness)
-
1/2 teaspoon Dijon mustard
-
Salt and pepper, to taste
Instructions
-
Prepare the salad ingredients:
In a large bowl, combine the broccoli florets, diced Honeycrisp apples, chopped red onion, sunflower seeds, and dried cranberries (if using). -
Make the dressing:
In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, and a pinch of salt and pepper until smooth and creamy. Taste the dressing and adjust the sweetness or tanginess by adding more honey or vinegar, if desired. -
Combine the salad and dressing:
Pour the dressing over the salad mixture and toss gently to coat everything evenly. -
Chill and serve:
Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld together. Serve chilled and enjoy!
Notes
-
You can substitute the mayonnaise with Greek yogurt for a lighter dressing.
-
For an extra crunch, try adding chopped walnuts or pecans instead of sunflower seeds.
-
If you don’t have Honeycrisp apples, any sweet and tart apple variety will work, such as Gala or Fuji.
-
This salad can be made ahead of time but is best served within 1-2 days to keep the apples fresh.
