Ingredients

1 medium honeydew melon, peeled, seeded, and cut into bite-sized cubes or balls

4 oz prosciutto, thinly sliced and torn into ribbons

2 cups arugula or baby greens (optional)

1/4 cup fresh mint or basil leaves, torn

1/4 cup crumbled goat cheese or shaved Parmesan (optional)

1 tbsp olive oil

1 tbsp lemon juice or white balsamic vinegar

1 tsp honey

Salt and black pepper, to taste

Optional: pinch of crushed red pepper flakes for a little heat
Instructions

In a small bowl, whisk together olive oil, lemon juice (or vinegar), honey, salt, and pepper. Set aside.

On a serving platter or in a large bowl, layer arugula (if using), honeydew melon, and prosciutto.

Drizzle the dressing over the salad.

Top with fresh mint or basil and cheese, if using.
