Description

This Honeydew & Prosciutto Salad is a fresh, sweet-and-salty appetizer that’s as simple as it is stunning. Juicy melon, savory prosciutto, and fresh herbs come together with a light vinaigrette for a dish that feels fancy but takes just minutes to prepare. Perfect for brunch, summer gatherings, or a light starter.


Ingredients

  • 1 medium honeydew melon, peeled, seeded, and cut into bite-sized cubes or balls

  • 4 oz prosciutto, thinly sliced and torn into ribbons

  • 2 cups arugula or baby greens (optional)

  • 1/4 cup fresh mint or basil leaves, torn

  • 1/4 cup crumbled goat cheese or shaved Parmesan (optional)

  • 1 tbsp olive oil

  • 1 tbsp lemon juice or white balsamic vinegar

  • 1 tsp honey

  • Salt and black pepper, to taste

 

  • Optional: pinch of crushed red pepper flakes for a little heat


Instructions

  1. In a small bowl, whisk together olive oil, lemon juice (or vinegar), honey, salt, and pepper. Set aside.

  2. On a serving platter or in a large bowl, layer arugula (if using), honeydew melon, and prosciutto.

  3. Drizzle the dressing over the salad.

  4. Top with fresh mint or basil and cheese, if using.

  5. Serve immediately, or chill briefly before serving.


Notes

  • For a fun twist, try this salad with cantaloupe or watermelon instead of honeydew.

  • Burrata or mozzarella pearls are also great cheese options.

 

  • To make it dairy-free, simply skip the cheese.
