- 1 cup heavy cream
- 1/2 cup light corn syrup
- 1/3 cup brown sugar
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp salt
- 6 oz semisweet or bittersweet chocolate, chopped
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
Instructions
- In a medium saucepan over medium heat, combine heavy cream, corn syrup, brown sugar, cocoa powder, and salt. Whisk until smooth and bring to a simmer.
- Reduce heat to low and add chopped chocolate. Stir constantly until chocolate is melted and mixture is smooth, about 2–3 minutes.
- Remove from heat and stir in butter and vanilla extract until fully incorporated.
- Let cool slightly before serving. Sauce will thicken as it cools.
- Store leftovers in an airtight container in the refrigerator for up to 2 weeks. Reheat gently before serving.
Notes
- For a richer flavor, use dark chocolate with at least 60% cocoa content.
- Add a pinch of espresso powder to enhance the chocolate taste.
- Delicious over ice cream, pancakes, or as a dip for fruit.
