Description

Huli Huli Chicken is a Hawaiian favorite featuring grilled chicken marinated in a sweet and tangy sauce made with pineapple juice, soy sauce, and brown sugar.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons ketchup
  • 2 tablespoons rice vinegar
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil (for grilling)
  • Chopped green onions (for garnish)

Instructions

  1. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, ginger, garlic, and sesame oil to make the marinade.
  2. Place chicken thighs in a resealable plastic bag or shallow dish and pour marinade over them. Marinate for at least 2 hours or overnight in the refrigerator.
  3. Preheat grill to medium-high heat and lightly oil the grates with vegetable oil.
  4. Remove chicken from marinade and grill for 5-7 minutes on each side, basting occasionally with reserved marinade, until fully cooked.
  5. Garnish with chopped green onions before serving.

Notes

  • For extra flavor, reserve some marinade before adding raw chicken to use exclusively for basting.
  • Use chicken thighs for juicier results, but breasts can also be used.
  • Pair with steamed rice and grilled pineapple for a complete meal.
