  • ½ cup rolled oats

  • 2 teaspoons cumin
  • ½ teaspoon curry powder
  • ¼ teaspoon cayenne pepper
  • ¼ cup plain breadcrumbs

Stuffed Filling

  • 4 oz cream cheese, softened
  • 2 jalapenos, diced (for filling, roasted)

Toppings and Assembly

  • 4 rolls
  • 4 slices provolone cheese
  • 4 jalapenos (for topping, roasted and sliced)

Instructions

  1. Prepare Aromatics: Place the chopped onion, 1 seeded jalapeno, and garlic cloves in a food processor and pulse briefly to chop finely without pureeing.
  2. Make Burger Mixture: Add black beans, rolled oats, corn, green onion, cumin, curry powder, cayenne pepper, and breadcrumbs to the food processor. Pulse for 20 seconds until combined but still textured. Scrape down the sides and pulse 10 more seconds to ensure even mixing.
  3. Chill Mixture: Transfer the bean mixture to a bowl, cover it, and refrigerate for at least 30 minutes to firm up for easier shaping.
  4. Roast Jalapenos: Preheat your broiler on high. Brush all 6 jalapenos (2 for filling and 4 for topping) with olive oil and broil for about 10 minutes until their skins blacken. Remove and let cool.
  5. Prepare Filling: Dice the 2 roasted jalapenos intended for the stuffing and mix them thoroughly with the softened cream cheese to create the spicy filling.
  6. Form Patties: Divide the black bean mixture into 4 equal portions. Flatten each portion into a patty, then make a small indentation in the center. Spoon 1–2 tablespoons of the jalapeno cream cheese filling into the center, then cover and seal the edges carefully to enclose the filling inside.
