- 1 lb boneless, skinless chicken thighs
- 2 tbsp jerk seasoning
- 1 tbsp olive oil
- 8 small flour or corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced pineapple
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1/4 cup sour cream
- 1 tbsp lime juice
- Salt and pepper to taste
Instructions
- In a bowl, toss chicken thighs with jerk seasoning, olive oil, salt, and pepper. Let marinate for 30 minutes.
- Heat a grill or skillet over medium-high heat and cook the chicken for 6-7 minutes per side until fully cooked.
- Remove the chicken and let it rest for 5 minutes before slicing into strips.
- Warm tortillas in a pan or microwave.
- Assemble the tacos by adding lettuce, sliced jerk chicken, diced pineapple, red onion, and cilantro onto each tortilla.
- Mix sour cream with lime juice and drizzle over the tacos.
- Serve immediately and enjoy!
