Description

Flavor-packed Jerk Chicken Tacos combining spicy, smoky Caribbean flavors with fresh toppings in a soft tortilla.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 2 tbsp jerk seasoning
  • 1 tbsp olive oil
  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced pineapple
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, toss chicken thighs with jerk seasoning, olive oil, salt, and pepper. Let marinate for 30 minutes.
  2. Heat a grill or skillet over medium-high heat and cook the chicken for 6-7 minutes per side until fully cooked.
  3. Remove the chicken and let it rest for 5 minutes before slicing into strips.
  4. Warm tortillas in a pan or microwave.
  5. Assemble the tacos by adding lettuce, sliced jerk chicken, diced pineapple, red onion, and cilantro onto each tortilla.
  6. Mix sour cream with lime juice and drizzle over the tacos.
  7. Serve immediately and enjoy!
