Description

This Tuna Sandwich is inspired by the popular Joe & the Juice recipe, featuring a savory tuna salad with fresh veggies, creamy mayo, and a touch of lemon. Served on soft, multigrain bread, this sandwich is satisfying, full of flavor, and perfect for a quick lunch or snack!


Ingredients

For the Tuna Salad:

  • 1 can (5 oz) tuna in water, drained

  • 2 tablespoons mayonnaise

  • 1 teaspoon Dijon mustard

  • 1 tablespoon lemon juice

  • Salt and pepper, to taste

For the Sandwich:

 

  • 2 slices multigrain bread (or any bread of your choice)

  • 1/4 cucumber, thinly sliced

  • 1/4 red onion, thinly sliced

  • A handful of arugula or mixed greens

  • 1-2 slices of tomato (optional)


Instructions

  1. Make the tuna salad:
    In a bowl, combine the drained tuna, mayonnaise, Dijon mustard, and lemon juice. Stir until well mixed. Season with salt and pepper to taste.

  2. Prepare the sandwich:
    Lay the slices of bread on a clean surface. Spread a generous amount of the tuna salad on one slice of bread.

  3. Assemble the sandwich:
    On top of the tuna salad, layer the cucumber slices, red onion slices, and a handful of arugula or mixed greens. If you like, you can also add tomato slices for extra freshness.

  4. Close and serve:
    Place the second slice of bread on top to close the sandwich. Press down lightly and cut the sandwich in half.

  5. Serve:
    Enjoy immediately with your favorite side or chips!


Notes

  • For a healthier twist, you can use Greek yogurt instead of mayonnaise.

  • Feel free to customize the sandwich with additional toppings such as avocado, olives, or pickles.

 

  • If you prefer a warm sandwich, you can toast the bread lightly before assembling the sandwich.
