- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat.
- Add chopped onion and garlic; sauté until softened.
- Add broccoli florets and broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes or until broccoli is tender.
- Use an immersion blender to partially blend the soup, leaving some chunks for texture.
- Stir in heavy cream and shredded cheddar cheese. Cook over low heat until the cheese is melted and the soup is creamy.
