Description

A rich and creamy Keto Tuscan Soup loaded with Italian flavors, tender sausage, spinach, and sun-dried tomatoes, all in a low-carb, high-fat broth perfect for ketogenic diets.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cups fresh spinach
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot over medium heat, add olive oil and cook the Italian sausage until browned. Remove excess grease if needed.
  2. Add diced onion and garlic to the pot and sauté for 2–3 minutes until translucent and fragrant.
  3. Stir in the chicken broth and bring to a simmer.
  4. Add sun-dried tomatoes and crushed red pepper flakes if using. Simmer for 5–7 minutes.
  5. Reduce heat to low and stir in the heavy cream and Parmesan cheese. Let it warm through.
  6. Add spinach and let it wilt in the soup for 2–3 minutes.
  7. Season with salt and pepper to taste, then serve hot.

Notes

  • Use kale instead of spinach for a different texture.
  • For a dairy-free version, use coconut cream and nutritional yeast instead of heavy cream and Parmesan.
  • Store leftovers in the refrigerator for up to 3 days.
