Description

This Lemon Curd Herbed Baked Brie is an elegant, easy-to-make appetizer that combines creamy melted brie with tangy lemon curd, fragrant fresh herbs, and crunchy nuts. Optionally wrapped in flaky puff pastry, it bakes to golden perfection and is perfect served warm with crackers, toasted baguette slices, or apple slices. A delightful balance of sweet, savory, and herbal flavors in every bite, ideal for entertaining or special occasions.

Ingredients

Scale

Main Ingredients

  • 1 wheel of brie (8 oz)
  • 1/4 cup lemon curd
  • 1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
  • 1 teaspoon chopped fresh rosemary (or 1/2 tsp dried)
  • 1 tablespoon chopped pecans or walnuts (optional)

Optional Puff Pastry Wrapping

  • 1 sheet puff pastry (optional, for wrapping)
  • 1 egg (for egg wash, if using puff pastry)

Serving Suggestions

  • Crackers, toasted baguette slices, or apple slices, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a small baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Prepare Puff Pastry (if using): Lightly roll out the puff pastry sheet to reduce thickness slightly, then place the brie wheel in the center of the pastry on the prepared baking sheet.
  3. Add Lemon Curd and Herbs: Spread the lemon curd evenly over the top of the brie. Sprinkle fresh thyme leaves, chopped rosemary, and optional chopped pecans or walnuts over the lemon curd layer to infuse herby and nutty flavors.
  4. Wrap Brie in Pastry (if using): Fold the puff pastry edges up and over the brie, sealing the cheese completely. Brush the surface of the pastry with a beaten egg to create a golden, shiny crust during baking.
  5. Prepare Without Pastry (if not using): If you prefer not to use puff pastry, simply place the brie directly on the parchment-lined baking sheet and top with lemon curd, herbs, and nuts as described.
  6. Bake the Brie: Place the baking sheet in the preheated oven. Bake for 15–20 minutes if not using puff pastry, or 25–30 minutes if wrapped in puff pastry, until the cheese is soft and melty and pastry (if used) is beautifully golden brown.
  7. Rest and Serve: Remove the baked brie from the oven and allow it to rest for 5 minutes to let the cheese set slightly. Serve warm alongside crackers, toasted baguette slices, or apple slices for a delicious appetizer experience.

Notes

  • If you don’t have fresh herbs, dried thyme and rosemary can be used. Use about half the amount since dried herbs are more concentrated.
  • For a nut-free version, simply omit the pecans or walnuts.
  • Serving with sliced apples adds a fresh, crisp contrast to the rich brie and sweet lemon curd.
  • Be sure to rest the baked brie to avoid burning your mouth and to allow easier slicing or spreading.
