Description

Refreshing and tangy lemon-lime soda cupcakes made with citrus soda for a light and fluffy texture, perfect for summer treats.


Ingredients

  • 1 cup lemon-lime soda (like Sprite or 7UP)
  • 3 large egg whites
  • 1/3 cup vegetable oil
  • 1 tablespoon lemon zest
  • 1 tablespoon lime zest
  • 1/2 teaspoon lemon extract (optional)
  • 1/2 teaspoon lime extract (optional)
  • 1 cup unsalted butter (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 23 tablespoons lemon-lime soda (for frosting)
  • 1/2 teaspoon lemon or lime zest (for garnish, optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, combine white cake mix, lemon-lime soda, egg whites, oil, lemon zest, lime zest, and optional extracts. Mix until smooth.
  3. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  4. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  5. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  6. For the frosting, beat butter until creamy. Gradually add powdered sugar, then mix in soda and zest until desired consistency is reached.
  7. Frost cooled cupcakes and garnish with extra zest if desired.
