- 1 box white cake mix
- 1 cup lemon-lime soda (like Sprite or 7UP)
- 3 large egg whites
- 1/3 cup vegetable oil
- 1 tablespoon lemon zest
- 1 tablespoon lime zest
- 1/2 teaspoon lemon extract (optional)
- 1/2 teaspoon lime extract (optional)
- 1 cup unsalted butter (for frosting)
- 4 cups powdered sugar (for frosting)
- 2–3 tablespoons lemon-lime soda (for frosting)
- 1/2 teaspoon lemon or lime zest (for garnish, optional)
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, combine white cake mix, lemon-lime soda, egg whites, oil, lemon zest, lime zest, and optional extracts. Mix until smooth.
- Divide batter evenly among cupcake liners, filling each about 2/3 full.
- Bake for 18-22 minutes or until a toothpick inserted comes out clean.
- Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat butter until creamy. Gradually add powdered sugar, then mix in soda and zest until desired consistency is reached.
- Frost cooled cupcakes and garnish with extra zest if desired.
Notes
- You can use diet soda for a lower calorie version.
- Adjust the amount of soda in frosting to get your preferred consistency.
- Store cupcakes in an airtight container for up to 3 days.
