Ingredients

1 cup ricotta cheese

1/4 cup grated Parmesan cheese

Zest of 1 lemon

2 tablespoons fresh lemon juice

1/4 cup pasta cooking water (reserved)

Instructions

Cook the Pasta:

Cook the pasta according to package instructions in salted water. Reserve 1/4 cup of the pasta cooking water before draining.

Cook the Spinach:

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Add the spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted. Remove from heat.

In a large bowl, combine the ricotta cheese, Parmesan cheese, lemon zest, and lemon juice. Season with salt and pepper to taste.

Add the reserved pasta cooking water to the ricotta mixture and stir until the sauce is smooth and creamy.
