Description

A hearty, comforting, and flavorful soup that tastes like a cheeseburger but with fewer carbs, perfect for a low-carb or keto-friendly diet.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/2 cup diced celery
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced tomato (optional)
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Chopped pickles and cooked bacon for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onion, celery, and bell pepper until soft, about 5 minutes.
  2. Add garlic and cook for another 30 seconds until fragrant.
  3. Add ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain excess grease if needed.
  4. Pour in the beef broth and bring to a simmer.
  5. Add cream cheese and stir until melted and fully incorporated.
  6. Stir in the heavy cream and shredded cheddar cheese until smooth and creamy.
  7. Add paprika, salt, and pepper to taste. Simmer on low for 10 minutes to blend flavors.
  8. If using, stir in diced tomatoes and simmer for 5 more minutes.
  9. Serve hot, garnished with chopped pickles and bacon if desired.

Notes

  • For a thicker soup, you can add a small amount of xanthan gum or reduce the broth slightly.
  • Feel free to swap ground beef for ground turkey or chicken.
  • This soup reheats well and can be stored in the fridge for up to 4 days.
