Instructions

  1. Mix base ingredients: In a medium-sized bowl, combine peanut butter, coconut flour, and sweetener, mixing until well-combined and smooth to form the base mixture.
  2. Prepare the pan: Line a small loaf pan with parchment paper and press the peanut butter mixture evenly into the bottom, ensuring a compact layer.
  3. Freeze base layer: Place the pan in the freezer for 15-20 minutes to allow the base to set firmly.
  4. Melt chocolate topping: In a separate bowl, melt the sugar-free chocolate chips and coconut oil together, stirring continuously until the mixture is smooth and glossy. Stir in vanilla extract for extra flavor.
  5. Assemble bars: Remove the pan from the freezer and carefully pour the melted chocolate mixture over the peanut butter layer, spreading evenly.
