Description
This Magic Lemon Cobbler is a delightful dessert with a sweet and tangy lemon flavor. What makes it “magic” is the way the batter creates its own crust while baking, giving you a warm, gooey, and buttery base with a crisp top. Easy to make and perfect for lemon lovers!
Ingredients
-
1 cup granulated sugar
-
1 cup whole milk
-
1/2 cup butter (melted)
-
1 tablespoon lemon zest
-
1/4 cup fresh lemon juice
-
1 cup all-purpose flour
-
2 teaspoons baking powder
-
1/4 teaspoon salt
-
1/4 cup powdered sugar (for dusting)
-
Optional: whipped cream or vanilla ice cream (for serving)
Instructions
-
Preheat the oven to 350°F (175°C).
-
In a medium-sized mixing bowl, combine the sugar, milk, melted butter, lemon zest, and lemon juice. Stir until well combined.
-
In a separate bowl, whisk together the flour, baking powder, and salt.
-
Slowly add the dry ingredients to the wet mixture, stirring until smooth and fully combined.
-
Pour the batter into a greased 8×8-inch baking dish. Do not stir the batter once it’s in the dish—just spread it evenly.
-
Bake for 40-45 minutes, or until the top is golden brown and the cobbler has set, but still slightly jiggly in the center.
-
Once baked, remove from the oven and let it cool for a few minutes. Dust with powdered sugar before serving.
-
Serve warm with whipped cream or vanilla ice cream if desired.
Notes
-
The “magic” part of this recipe comes from the way the batter separates and forms a crust on top while baking, leaving a gooey lemon filling at the bottom.
-
Make sure to use fresh lemon juice for the best flavor.
-
You can double the recipe for a larger crowd or bake in a 9×13-inch dish, adjusting the baking time slightly.
