Description

This Magic Lemon Cobbler is a delightful dessert with a sweet and tangy lemon flavor. What makes it “magic” is the way the batter creates its own crust while baking, giving you a warm, gooey, and buttery base with a crisp top. Easy to make and perfect for lemon lovers!

Ingredients

  • 1 cup granulated sugar

  • 1 cup whole milk

  • 1/2 cup butter (melted)

  • 1 tablespoon lemon zest

  • 1/4 cup fresh lemon juice

  • 1 cup all-purpose flour

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1/4 cup powdered sugar (for dusting)

  • Optional: whipped cream or vanilla ice cream (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a medium-sized mixing bowl, combine the sugar, milk, melted butter, lemon zest, and lemon juice. Stir until well combined.

  3. In a separate bowl, whisk together the flour, baking powder, and salt.

  4. Slowly add the dry ingredients to the wet mixture, stirring until smooth and fully combined.

  5. Pour the batter into a greased 8×8-inch baking dish. Do not stir the batter once it’s in the dish—just spread it evenly.

  6. Bake for 40-45 minutes, or until the top is golden brown and the cobbler has set, but still slightly jiggly in the center.

  7. Once baked, remove from the oven and let it cool for a few minutes. Dust with powdered sugar before serving.

  8. Serve warm with whipped cream or vanilla ice cream if desired.

Notes

  • The “magic” part of this recipe comes from the way the batter separates and forms a crust on top while baking, leaving a gooey lemon filling at the bottom.

  • Make sure to use fresh lemon juice for the best flavor.

  • You can double the recipe for a larger crowd or bake in a 9×13-inch dish, adjusting the baking time slightly.
