- 1/2 cup mashed potatoes (plain, no seasoning)
- 1 tsp vanilla extract
- 4–5 cups powdered sugar (as needed for dough consistency)
- 1/2 cup creamy peanut butter
Instructions
- In a large bowl, combine mashed potatoes and vanilla extract.
- Gradually add powdered sugar, mixing until a smooth, pliable dough forms (it should not be sticky).
- On a surface dusted with powdered sugar, roll out the dough into a rectangle about 1/4-inch thick.
- Spread peanut butter evenly over the dough.
- Carefully roll the dough into a tight log, starting from one long edge.
- Wrap in parchment paper and chill in the refrigerator for at least 1 hour.
- Once firm, slice into 1/4-inch thick pieces and serve.
Notes
- Use sweetened or natural peanut butter based on preference.
- Store in an airtight container in the refrigerator for up to 1 week.
- Add a pinch of salt to the dough if using unsalted peanut butter.
