Description

Manchego Brown Butter Whipped Potatoes offer a creamy and nutty twist on classic mashed potatoes, combining golden brown butter and rich Manchego cheese for an indulgent side dish perfect for holidays and everyday meals.

Ingredients

Scale

Potatoes

  • 2 pounds Yukon Gold potatoes, peeled and cut into chunks

Dairy & Cheese

  • 6 tablespoons unsalted butter
  • 1/2 cup whole milk, warmed
  • 1/2 cup heavy cream, warmed
  • 1 cup finely grated Manchego cheese

Seasoning & Garnish

  • 1 teaspoon salt (more to taste)
  • 1/2 teaspoon black pepper
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Boil Potatoes: Place the peeled and chunked potatoes in a large pot and cover with cold salted water. Bring the water to a boil over medium-high heat and cook the potatoes until they are fork-tender, about 15 to 20 minutes.
  2. Prepare Brown Butter: While the potatoes cook, melt the butter in a small saucepan over medium heat, swirling the pan occasionally. Continue cooking the butter until it turns golden brown and emits a nutty aroma, approximately 5 to 7 minutes. Remove the pan from heat and set aside.
  3. Drain and Whip Potatoes: Drain the cooked potatoes thoroughly and return them to the hot pot or transfer to a large bowl. Using a hand mixer or stand mixer, whip the potatoes until they become smooth and fluffy.
  4. Incorporate Dairy and Butter: Slowly pour in the warm milk and heavy cream while continuing to whip the potatoes for a creamy texture. Then gradually add the browned butter, being careful to leave behind any dark browned solids if preferred. Mix thoroughly until fully combined.
  5. Add Cheese and Seasoning: Stir in the finely grated Manchego cheese, salt, and black pepper. Taste and adjust the seasoning if necessary to balance flavors.
  6. Serve: Serve the whipped potatoes warm, optionally topped with chopped chives or parsley for a fresh garnish.

Notes

  • Yukon Gold potatoes are ideal for their creamy texture, but Russet potatoes can be used as a substitute.
  • For extra richness, increase the amount of cream or butter slightly.
  • Manchego cheese provides a distinctive nutty flavor; Parmesan can be used as an alternative.
