Mashed Potato Cups are a fun and savory twist on traditional mashed potatoes, baked in muffin tins with cheese and herbs for a perfectly portioned side dish or party snack.

- 3 cups mashed potatoes (prepared and cooled)
- 1 large egg
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 green onions, sliced
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Nonstick cooking spray
- Extra cheese or bacon bits for topping (optional)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease or spray a muffin tin with nonstick cooking spray.
- In a large bowl, combine mashed potatoes, egg, cheddar cheese, Parmesan cheese, green onions, garlic powder, salt, and pepper. Mix well until smooth and fully combined.
- Spoon the potato mixture into the prepared muffin cups, filling each about 3/4 full. Smooth the tops with a spoon.
- Top each cup with a little extra cheese or bacon bits if desired.
- Bake for 20–25 minutes, or until the tops are golden and the edges are slightly crispy.
- Let cool for a few minutes before removing from the pan. Serve warm.
Notes
- Perfect use for leftover mashed potatoes.
- You can freeze baked cups for later—just reheat in the oven or air fryer.
- Add chopped cooked bacon, herbs, or jalapeños for variation.
