Description

Mini Meatball Subs are bite-sized sandwiches made with tender meatballs, marinara sauce, and melted cheese, all stuffed into small rolls for a fun and flavorful appetizer or meal.


Ingredients

  • 1 lb ground beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups marinara sauce
  • 12 mini sandwich rolls or slider buns
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix until just combined.
  3. Form into small meatballs (about 1 inch in diameter) and place on the baking sheet.
  4. Bake for 15–18 minutes, or until fully cooked.
  5. While meatballs bake, warm marinara sauce in a saucepan over medium heat.
  6. Add cooked meatballs to marinara sauce and stir to coat.
  7. Slice rolls and place a few saucy meatballs into each one. Top with shredded mozzarella.
  8. Place assembled subs on a baking tray and return to oven for 5–7 minutes, or until cheese is melted and bubbly.
  9. Garnish with fresh parsley and serve warm.

Notes

  • Use store-bought meatballs for a quicker version.
  • Try garlic butter on the rolls for added flavor.
  • Serve with a side of marinara for dipping.
