Description
Mini Meatball Subs are bite-sized sandwiches made with tender meatballs, marinara sauce, and melted cheese, all stuffed into small rolls for a fun and flavorful appetizer or meal.

- 1 lb ground beef
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 1/2 cups marinara sauce
- 12 mini sandwich rolls or slider buns
- 1 1/2 cups shredded mozzarella cheese
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix until just combined.
- Form into small meatballs (about 1 inch in diameter) and place on the baking sheet.
- Bake for 15–18 minutes, or until fully cooked.
- While meatballs bake, warm marinara sauce in a saucepan over medium heat.
- Add cooked meatballs to marinara sauce and stir to coat.
- Slice rolls and place a few saucy meatballs into each one. Top with shredded mozzarella.
- Place assembled subs on a baking tray and return to oven for 5–7 minutes, or until cheese is melted and bubbly.
- Garnish with fresh parsley and serve warm.
Notes
- Use store-bought meatballs for a quicker version.
- Try garlic butter on the rolls for added flavor.
- Serve with a side of marinara for dipping.
