- 1 lb boneless skinless chicken breasts, cut into strips
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz penne or your favorite pasta
- 1/2 cup grated Parmesan cheese
- 1/4 tsp red pepper flakes (optional)
- Fresh basil or parsley for garnish
Instructions
- Season the chicken with salt, pepper, and Italian seasoning.
- In a large pot or deep skillet, heat olive oil over medium-high heat. Add the chicken and sear until browned and cooked through. Remove from the pot and set aside.
- In the same pot, add minced garlic and sun-dried tomatoes. Sauté for about 1 minute until fragrant.
- Pour in the chicken broth and heavy cream. Bring to a gentle boil.
- Add the pasta and stir well. Reduce heat to medium and cook uncovered for 10–12 minutes, stirring occasionally until the pasta is al dente.
- Return the chicken to the pot and stir in Parmesan cheese and red pepper flakes if using. Cook for another 2–3 minutes until everything is heated through and creamy.
- Garnish with fresh basil or parsley and serve hot.
Notes
- Use rotini, rigatoni, or spaghetti if penne isn’t available.
- Adjust cream and broth ratio to achieve your desired sauce consistency.
- For a lighter version, use half-and-half instead of heavy cream.
