Description

One-Pot Marry Me Chicken Pasta is a creamy, flavorful dish made with tender chicken, sun-dried tomatoes, garlic, and pasta all cooked together in one pot. It’s rich, comforting, and sure to impress—hence the name!


Ingredients

  • 1 lb boneless skinless chicken breasts, cut into strips
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne or your favorite pasta
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Fresh basil or parsley for garnish

Instructions

  1. Season the chicken with salt, pepper, and Italian seasoning.
  2. In a large pot or deep skillet, heat olive oil over medium-high heat. Add the chicken and sear until browned and cooked through. Remove from the pot and set aside.
  3. In the same pot, add minced garlic and sun-dried tomatoes. Sauté for about 1 minute until fragrant.
  4. Pour in the chicken broth and heavy cream. Bring to a gentle boil.
  5. Add the pasta and stir well. Reduce heat to medium and cook uncovered for 10–12 minutes, stirring occasionally until the pasta is al dente.
  6. Return the chicken to the pot and stir in Parmesan cheese and red pepper flakes if using. Cook for another 2–3 minutes until everything is heated through and creamy.
  7. Garnish with fresh basil or parsley and serve hot.

Notes

  • Use rotini, rigatoni, or spaghetti if penne isn’t available.
  • Adjust cream and broth ratio to achieve your desired sauce consistency.
  • For a lighter version, use half-and-half instead of heavy cream.
