Description
These homemade chicken gyros are bursting with flavor from a simple marinade of Greek yogurt, lemon, garlic, and herbs. Wrapped in soft pita bread with crisp veggies and creamy tzatziki, they’re easy to make and way better than takeout. A go-to meal in our house!
Ingredients
For the Chicken Marinade:

1 1/2 pounds boneless, skinless chicken thighs or breasts

3/4 cup plain Greek yogurt

3 tablespoons olive oil

3 cloves garlic, minced

Juice of 1 lemon

1 tablespoon red wine vinegar

1 1/2 teaspoons dried oregano

1 teaspoon ground cumin

1/2 teaspoon salt
-
1/2 teaspoon black pepper
For the Gyros:

4-6 soft pita breads
-
1 cup tzatziki sauce (store-bought or homemade)

1 cup cherry tomatoes, halved

1 small cucumber, sliced or diced

1/2 red onion, thinly sliced

Chopped lettuce or spinach (optional)

Crumbled feta cheese (optional)
Instructions

In a large bowl, whisk together yogurt, olive oil, garlic, lemon juice, vinegar, oregano, cumin, salt, and pepper.

Add chicken and coat well in the marinade. Cover and refrigerate for at least 1 hour, or up to overnight.

Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5–7 minutes per side, or until fully cooked and nicely browned.

Let the chicken rest for a few minutes, then slice thinly.

Warm the pita bread slightly in a dry pan or in the oven.

Assemble the gyros by spreading tzatziki on each pita, then topping with chicken, tomatoes, cucumber, onion, lettuce, and feta if using.

Fold and serve immediately!
Notes

Chicken thighs give the best flavor and juiciness, but breasts work well too.

Make it into a gyro bowl by serving over rice instead of in pita.
