Description

Peanut Butter Eggs are a delightful homemade treat that replicate the classic candy shop favorite. Featuring a creamy peanut butter filling coated in rich, smooth chocolate, these no-bake confections are perfect for Easter, holidays, or anytime you crave a quick and irresistible dessert.

Ingredients

Scale

Filling

  • 1 cup creamy peanut butter
  • ¼ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Chocolate Coating

  • 2 cups semi-sweet or milk chocolate chips
  • 1 tablespoon coconut oil or shortening (optional, for smoother coating)

Instructions

  1. Prepare the peanut butter mixture: In a large bowl, combine the creamy peanut butter, softened butter, and vanilla extract. Mix them together until the mixture is smooth and creamy.
  2. Add powdered sugar: Gradually incorporate the powdered sugar into the peanut butter mixture, stirring continuously until a thick dough forms that is easy to shape.
  3. Shape the eggs: Scoop about 2 tablespoons of the mixture per egg and use your hands to shape each portion into an egg-like oval. Arrange the shaped eggs on a parchment-lined baking sheet.
  4. Freeze to firm up: Place the baking sheet with the peanut butter eggs in the freezer for 30 minutes to help them firm up and maintain shape during dipping.
  5. Melt the chocolate coating: While the eggs freeze, melt the chocolate chips along with the optional coconut oil or shortening in a microwave-safe bowl. Heat in 30-second intervals, stirring after each, until the chocolate is fully melted and smooth.
  6. Dip the eggs in chocolate: Using a fork, dip each frozen peanut butter egg into the melted chocolate, allowing any excess chocolate to drip off before placing it back onto the parchment-lined baking sheet.
  7. Chill to set: Refrigerate the chocolate-coated eggs for 15 to 20 minutes or until the chocolate coating is fully set and firm to the touch.
  8. Store properly: Once set, keep the peanut butter eggs stored in an airtight container in the refrigerator to maintain freshness until serving.

Notes

  • You can drizzle white chocolate over the top for a decorative touch or use colored candy melts for festive flair.
  • These peanut butter eggs freeze well for extended storage; just thaw them slightly before serving for the best texture.
