Peanut Butter S’mores Sandwich Cookies are a decadent twist on the campfire classic, featuring soft peanut butter cookies filled with gooey marshmallow fluff and melty chocolate — no fire needed!

- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup mini marshmallows or marshmallow creme
- 4 oz semi-sweet chocolate, chopped or in chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla extract, beating until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients and mix until just combined.
- Scoop out 1-tbsp portions of dough and roll into balls. Place on prepared baking sheet and flatten slightly with a fork.
- Bake for 8–10 minutes, until edges are set. Cool completely on a wire rack.
- To assemble, spread a layer of marshmallow creme or a few mini marshmallows on the flat side of one cookie. Top with melted or softened chocolate and sandwich with a second cookie.
- Let set for a few minutes or enjoy warm and gooey!
Notes
- Microwave chocolate in short intervals until melted for easy spreading.
- Use store-bought or homemade marshmallow creme.
- Store in an airtight container for up to 3 days.
