Description

Peanut Butter S’mores Sandwich Cookies are a decadent twist on the campfire classic, featuring soft peanut butter cookies filled with gooey marshmallow fluff and melty chocolate — no fire needed!


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup mini marshmallows or marshmallow creme
  • 4 oz semi-sweet chocolate, chopped or in chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add egg and vanilla extract, beating until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients and mix until just combined.
  5. Scoop out 1-tbsp portions of dough and roll into balls. Place on prepared baking sheet and flatten slightly with a fork.
  6. Bake for 8–10 minutes, until edges are set. Cool completely on a wire rack.
  7. To assemble, spread a layer of marshmallow creme or a few mini marshmallows on the flat side of one cookie. Top with melted or softened chocolate and sandwich with a second cookie.
  8. Let set for a few minutes or enjoy warm and gooey!

Notes

  • Microwave chocolate in short intervals until melted for easy spreading.
  • Use store-bought or homemade marshmallow creme.
  • Store in an airtight container for up to 3 days.
