- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 package (8 oz) cream cheese, softened
- 1/2 cup powdered sugar
- 1 container (8 oz) whipped topping (like Cool Whip), thawed
- 1 can (20 oz) crushed pineapple, drained
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 cup cold milk
- 1/2 teaspoon coconut extract
- 1/2 cup shredded sweetened coconut (optional topping)
- Maraschino cherries (optional garnish)
Instructions
- In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9×13-inch dish to form a crust. Chill in refrigerator for 15 minutes.
- In a large bowl, beat cream cheese and powdered sugar until smooth. Fold in half of the whipped topping.
- Spread the cream cheese mixture evenly over the chilled crust.
- In another bowl, whisk together vanilla pudding mix, cold milk, and coconut extract until thickened. Fold in drained crushed pineapple.
- Spread the pineapple mixture over the cream cheese layer.
- Top with remaining whipped topping and sprinkle with shredded coconut if using.
- Chill for at least 4 hours or until set. Garnish with maraschino cherries before serving.
Notes
- Make sure the crushed pineapple is well-drained to avoid a soggy dessert.
- Can be made a day ahead for convenience.
- Use homemade whipped cream for a richer flavor if desired.
