Description

Pina Colada Lush is a tropical, no-bake dessert layered with a buttery crust, creamy pineapple filling, and fluffy whipped topping. Perfect for summer parties or potlucks.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 container (8 oz) whipped topping (like Cool Whip), thawed
  • 1 can (20 oz) crushed pineapple, drained
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold milk
  • 1/2 teaspoon coconut extract
  • 1/2 cup shredded sweetened coconut (optional topping)
  • Maraschino cherries (optional garnish)

Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9×13-inch dish to form a crust. Chill in refrigerator for 15 minutes.
  2. In a large bowl, beat cream cheese and powdered sugar until smooth. Fold in half of the whipped topping.
  3. Spread the cream cheese mixture evenly over the chilled crust.
  4. In another bowl, whisk together vanilla pudding mix, cold milk, and coconut extract until thickened. Fold in drained crushed pineapple.
  5. Spread the pineapple mixture over the cream cheese layer.
  6. Top with remaining whipped topping and sprinkle with shredded coconut if using.
  7. Chill for at least 4 hours or until set. Garnish with maraschino cherries before serving.

Notes

  • Make sure the crushed pineapple is well-drained to avoid a soggy dessert.
  • Can be made a day ahead for convenience.
  • Use homemade whipped cream for a richer flavor if desired.
