Main Ingredients:

- 1 (3.4 oz) box instant pistachio pudding mix

Instructions
- Preheat and Prepare: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream Ingredients: In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs, vanilla extract, and almond extract.
- Mix Dry Ingredients: In a separate bowl, whisk together flour, baking soda, salt, and pistachio pudding mix.
- Combine and Fold: Gradually add dry mixture to wet ingredients, mix until a soft dough forms. Fold in chopped pistachios and white chocolate chips if using.
- Form and Bake: Scoop tablespoon-sized dough, roll into balls, place on baking sheet, bake for 10-12 minutes until lightly golden. Cool on baking sheet before transferring to a wire rack.
