For the Soup:
- 6 cups chicken broth
- 1 cup sliced shiitake mushrooms
- 2 cups baby bok choy, chopped
- 1 tbsp soy sauce
- 1 tsp rice vinegar
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Prepare the Potstickers: In a bowl, mix together ground pork, garlic, ginger, green onions, soy sauce, sesame oil, and black pepper. Place a spoonful of the mixture onto a dumpling wrapper, wet the edges with water, fold, and crimp to seal.
- Cook the Soup: In a pot, bring chicken broth to a simmer. Add mushrooms, bok choy, soy sauce, rice vinegar, and red pepper flakes. Simmer for 10 minutes.
- Add Potstickers: Gently drop potstickers into the soup and cook for an additional 8-10 minutes until they float to the surface.
- Season and Serve: Season with salt and pepper. Ladle the soup into bowls, ensuring each serving has a mix of potstickers, vegetables, and broth.
