- ½ cup canned pumpkin puree
- 1–2 tablespoons maple syrup or brown sugar
- 1 teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 1 teaspoon vanilla extract

- Milk or cream for serving
Instructions
- Heat Liquid: In a medium saucepan over medium heat, bring milk (or water) to a simmer.
- Add Ingredients: Stir in oats, pumpkin puree, pumpkin pie spice, cinnamon, salt, and maple syrup or brown sugar.
- Cook Oatmeal: Cook for 5–7 minutes, stirring occasionally, until the oats are tender and the mixture is creamy.
- Finish and Serve: Remove from heat and stir in vanilla. Divide into bowls and top with nuts, dried fruit, and a splash of milk or cream if desired. Serve warm.
Notes
- For extra protein, stir in a spoonful of nut butter or a scoop of protein powder after cooking.
- Steel-cut oats can be used, but will require longer cooking time and additional liquid.
