Description

This vibrant Roasted Beet Jam offers a unique blend of earthy beets, sweet sugar, and tangy citrus accents. Roasting the beets intensifies their natural sweetness before they are simmered into a luscious jam, enhanced with optional warm ginger and bright orange zest. Perfect as a spread on toast, paired with cheese, or used as a flavorful glaze for meats and vegetables.

Ingredients

Scale

Produce

  • 3 medium-sized beets, peeled and diced
  • 1 tbsp grated orange zest (optional for a citrus twist)

Other Ingredients

  • 1 cup granulated sugar
  • 1/2 cup water
  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt
  • 1/2 tsp ground ginger (optional for extra warmth)

Instructions

  1. Roast the Beets: Preheat your oven to 400°F (200°C). Place the diced beets on a baking sheet lined with parchment paper and roast for 25-30 minutes, or until tender and easily pierced with a fork. Allow them to cool slightly.
  2. Cook the Jam: Transfer the roasted beets to a saucepan. Add sugar, water, lemon juice, apple cider vinegar, and salt. Bring the mixture to a boil over medium-high heat, then reduce to a simmer.
  3. Simmer and Mash: Let the mixture simmer for 20-30 minutes, stirring occasionally, until the beets break down and the texture thickens into jam. For a smoother jam, use an immersion blender to purée the mixture.
  4. Add Spices: Stir in ground ginger and orange zest if using. Continue simmering for another 5 minutes to blend the flavors.
  5. Jar the Jam: Remove from heat once desired thickness is reached. Cool slightly before transferring to sterilized jars. Seal the jars and let cool completely at room temperature.
  6. Serve: Store the jam in the refrigerator for up to 3 weeks. Enjoy spread on toast, paired with cheese, or as a topping for meats and roasted vegetables.

Notes

  • For a smoother texture, use an immersion blender after simmering.
  • Adjust the sugar quantity to taste for a less sweet jam.
  • Sterilize jars properly to extend shelf life.
  • This jam pairs beautifully with goat cheese or creamy cheeses.
  • Use fresh beets for the best flavor and color.
