- 1 lb Italian sausage (mild or spicy), casings removed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups water
- 1 1/2 lbs potatoes, diced (Yukon gold or russet)
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- Salt to taste
- 4 cups chopped kale, stems removed
- 1/2 cup heavy cream (optional, for creamier version)
- Grated Parmesan cheese, for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove excess grease if needed.
- Add onion and cook until softened, about 3–4 minutes. Stir in garlic and cook for 30 seconds.
- Add chicken broth, water, potatoes, thyme, pepper, and salt. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
- Stir in chopped kale and simmer for another 5–7 minutes until wilted and tender.
- For a creamier soup, stir in heavy cream and heat through without boiling.
- Ladle into bowls and top with grated Parmesan if desired. Serve warm.
