  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 4 cups chopped kale, stems removed
  • 1/2 cup heavy cream (optional, for creamier version)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove excess grease if needed.
  2. Add onion and cook until softened, about 3–4 minutes. Stir in garlic and cook for 30 seconds.
  3. Add chicken broth, water, potatoes, thyme, pepper, and salt. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
  4. Stir in chopped kale and simmer for another 5–7 minutes until wilted and tender.
  5. For a creamier soup, stir in heavy cream and heat through without boiling.
  6. Ladle into bowls and top with grated Parmesan if desired. Serve warm.
