- 1 (14.5 oz) can diced tomatoes
- 1 (13.5 oz) can coconut milk
- 2 tablespoons tomato paste
- 1 tablespoon brown sugar

Instructions
- Sauté Aromatics: Heat the vegetable oil in a skillet over medium heat. Add the diced onion and sauté for 4–5 minutes until softened. Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.
- Add Spices: Mix in the curry powder, ground cumin, turmeric, chili powder, salt, and black pepper. Stir continuously for 1 minute to toast the spices and enhance their flavors.
- Transfer to Slow Cooker: Transfer the sautéed onion and spice mixture to the slow cooker. Add the beef chuck cubes, diced tomatoes, coconut milk, tomato paste, brown sugar, chopped potatoes, and sliced carrots. Stir well to combine all ingredients evenly.
- Cook the Curry: Cover the slow cooker and cook on low for 8 hours or on high for 4–5 hours, until the beef is tender and the flavors have melded together beautifully.
- Adjust Seasoning and Serve: Taste the curry and adjust seasoning if necessary. Serve the beef curry hot over steamed rice or with warm naan bread. Garnish with chopped fresh cilantro if desired for a burst of fresh flavor.

- For extra depth of flavor, brown the beef cubes in the skillet before adding them to the slow cooker.
