Ingredients
Scale
Vegetables & Herbs
- 1 cup red bell peppers, diced
- 5-6 jalapeños, seeds removed, diced
- 2 tablespoons parsley, finely chopped
- 1 cup frozen corn
Cheese & Dairy
- 2 cups cheddar cheese, shredded
- 1 cup pepper jack cheese
- 1 cup sour cream
- 8 ounces cream cheese, softened
Other Ingredients
- 6 slices bacon, precooked and crumbled
- 1 ½ cups Salsa Verde
- 1 teaspoon garlic powder
- 1 teaspoon dill
- ½ teaspoon cumin
- ½ teaspoon red pepper flakes
Instructions
- Combine Ingredients: In a 3-quart slow cooker, combine diced red bell peppers, jalapeños with seeds removed, finely chopped parsley, frozen corn, precooked crumbled bacon, salsa verde, garlic powder, dill, cumin, red pepper flakes, shredded cheddar and pepper jack cheeses, sour cream, and softened cream cheese. Mix everything together until evenly combined.
- Cook: Cover the slow cooker with a lid and cook the mixture on the low heat setting for 1 to 2 hours. Stir the dip every 30 minutes to ensure the cheeses melt evenly and prevent sticking. Continue cooking until the dip is thoroughly melted, bubbly, and hot throughout.
- Serve: Once the dip is fully melted and heated through, switch the slow cooker setting to ‘warm’ to keep the dip at a perfect serving temperature. Provide guests with chips, crackers, or vegetables to dip as they enjoy this creamy and flavorful appetizer.
Notes
- Remove jalapeño seeds to reduce heat if desired or leave some in for extra spice.
- Precooking bacon ensures crispiness and better flavor distribution in the dip.
- You can use fresh corn as a substitute for frozen if preferred.
- Adjust seasonings like cumin and red pepper flakes to suit your spice tolerance.
- This dip pairs well with tortilla chips, crackers, or fresh veggies.
