- 1 lb smoked sausage, sliced
- 1 medium sweet potato, peeled and diced
- 1 bunch kale, stems removed and chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon smoked paprika
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the sausage slices and cook until browned.
- Add the onion and garlic to the pot and sauté for 2-3 minutes until softened.
- Stir in the sweet potato, smoked paprika, and thyme. Cook for another 3-4 minutes.
- Add the chicken broth, diced tomatoes, and a pinch of salt and pepper. Bring to a simmer.
- Reduce heat to low and let the soup simmer for 15-20 minutes until the sweet potatoes are tender.
- Stir in the chopped kale and cook for an additional 5 minutes until the kale is wilted and tender.
- Adjust seasoning with salt and pepper as needed. Serve hot.
Notes
- For a spicier soup, add a pinch of red pepper flakes along with the smoked paprika.
- You can substitute the sausage with a vegetarian option if preferred.
