Description

Ingredients

  • 1 lb smoked sausage, sliced
  • 1 medium sweet potato, peeled and diced
  • 1 bunch kale, stems removed and chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the sausage slices and cook until browned.
  2. Add the onion and garlic to the pot and sauté for 2-3 minutes until softened.
  3. Stir in the sweet potato, smoked paprika, and thyme. Cook for another 3-4 minutes.
  4. Add the chicken broth, diced tomatoes, and a pinch of salt and pepper. Bring to a simmer.
  5. Reduce heat to low and let the soup simmer for 15-20 minutes until the sweet potatoes are tender.
  6. Stir in the chopped kale and cook for an additional 5 minutes until the kale is wilted and tender.
  7. Adjust seasoning with salt and pepper as needed. Serve hot.

Notes

  • For a spicier soup, add a pinch of red pepper flakes along with the smoked paprika.
  • You can substitute the sausage with a vegetarian option if preferred.
  • This soup can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
