Description

These S’mores Pudding Cups are the ultimate sweet treat, featuring a layer of rich chocolate pudding, a graham cracker crust, and a toasted marshmallow topping. All the classic s’mores flavors in a no-bake, mess-free dessert!


Ingredients

For the Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs

  • 1/4 cup granulated sugar

  • 1/2 teaspoon cinnamon (optional)

  • 6 tablespoons unsalted butter, melted

For the Chocolate Pudding:

  • 2 cups whole milk

  • 1/2 cup granulated sugar

  • 1/4 cup unsweetened cocoa powder

  • 2 tablespoons cornstarch

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 tablespoons unsalted butter

For the Marshmallow Topping:

  • 1 1/2 cups mini marshmallows


Instructions

Make the Graham Cracker Crust:

  1. In a medium bowl, mix together the graham cracker crumbs, sugar, and cinnamon (if using).

  2. Stir in the melted butter until the mixture is evenly combined and looks like wet sand.

  3. Divide the crust mixture evenly among 6 small dessert cups or jars (about 1/4 cup each) and press down firmly to create a crust. Set aside.

Make the Chocolate Pudding:

  1. In a medium saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt over medium heat.

  2. Bring to a simmer, whisking constantly. Continue cooking for 2–3 minutes until the pudding thickens and starts to bubble.

  3. Remove from heat and stir in the vanilla extract and butter until smooth.

  4. Pour the chocolate pudding into each dessert cup over the graham cracker crust. Let it cool to room temperature, then chill in the fridge for at least 1 hour, or until ready to serve.

Toast the Marshmallows:

  1. Before serving, preheat your broiler. Place the mini marshmallows in a single layer on a baking sheet lined with parchment paper.

  2. Broil the marshmallows for 1–2 minutes, watching closely, until they are golden brown and toasted. Remove from the oven.

Assemble the S’mores Pudding Cups:

 

  1. Once the pudding has set, top each cup with a layer of toasted marshmallows.

  2. Serve immediately or refrigerate until ready to enjoy!


Notes

  • If you prefer not to use a broiler, you can toast the marshmallows with a kitchen torch for that perfect golden-brown color.

  • For a more decadent treat, drizzle with chocolate syrup or sprinkle some extra graham cracker crumbs on top.
