For the Chicken:
- 4 bone-in, skin-on chicken thighs

- 1 onion, thinly sliced
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Season the Chicken: In a small bowl, combine salt, pepper, paprika, and garlic powder. Season the chicken thighs on both sides with the spice mixture.
- Sear the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Sear the chicken thighs skin side down until golden brown, about 4-5 minutes per side. Remove chicken from the skillet and set aside.
- Make the Gravy: In the same skillet, add sliced onions and mushrooms. Cook until softened, about 5 minutes. Add garlic and cook for an additional minute. Sprinkle flour over the vegetables and stir to combine.
- Add Liquid: Slowly pour in chicken broth, stirring constantly to avoid lumps. Bring to a simmer. Return chicken to the skillet, cover, and simmer for 25-30 minutes until chicken is cooked through.
- Finish the Dish: Stir in heavy cream and season with salt and pepper. Simmer for another 5 minutes until the gravy has thickened.
- Serve: Serve the smothered chicken hot over rice or mashed potatoes.
