- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 tsp red pepper flakes
- 1/4 cup fresh parsley, chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- Parmesan cheese, optional
Instructions
- Cook the spaghetti in salted water according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the garlic and cook until golden brown, about 2 minutes. Be careful not to burn the garlic.
- Add the red pepper flakes to the skillet and stir for another 30 seconds.
- Once the pasta is cooked, reserve 1/4 cup of pasta water and drain the rest.
- Add the cooked spaghetti to the skillet with the garlic and oil mixture. Toss to combine.
- If needed, add some of the reserved pasta water to create a light sauce.
- Stir in the chopped parsley and season with salt and pepper to taste.
- Serve immediately with optional grated Parmesan on top.
Notes
- For extra flavor, add a squeeze of lemon juice or zest.
- If you prefer a milder version, reduce the red pepper flakes.
- Make sure the garlic is cooked gently to avoid bitterness.
