Description

Spaghetti Aglio e Olio is a traditional Italian pasta dish made with simple ingredients like garlic, olive oil, chili flakes, and parsley. It’s quick, flavorful, and perfect for a light meal or late-night snack.


Ingredients

  • 200g spaghetti
  • 4 cloves garlic, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Parmesan cheese, optional

Instructions

  1. Cook the spaghetti in salted water according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the garlic and cook until golden brown, about 2 minutes. Be careful not to burn the garlic.
  4. Add the red pepper flakes to the skillet and stir for another 30 seconds.
  5. Once the pasta is cooked, reserve 1/4 cup of pasta water and drain the rest.
  6. Add the cooked spaghetti to the skillet with the garlic and oil mixture. Toss to combine.
  7. If needed, add some of the reserved pasta water to create a light sauce.
  8. Stir in the chopped parsley and season with salt and pepper to taste.
  9. Serve immediately with optional grated Parmesan on top.

Notes

  • For extra flavor, add a squeeze of lemon juice or zest.
  • If you prefer a milder version, reduce the red pepper flakes.
  • Make sure the garlic is cooked gently to avoid bitterness.
