Description

This Strawberry Pie is a classic dessert made with a buttery, flaky crust filled with juicy, sweet strawberries in a simple, flavorful syrup. It’s easy to make and perfect for spring and summer gatherings, or whenever you’re craving a refreshing fruit pie!


Ingredients

  • 1 package refrigerated pie crusts (or 1 homemade pie dough recipe)

For the Filling:

  • 4 cups fresh strawberries, hulled and halved (reserve a few whole berries for garnish, if desired)

  • 1 cup granulated sugar

  • 1/4 cup cornstarch

  • 1/2 teaspoon lemon juice

  • 1/2 teaspoon vanilla extract

  • Pinch of salt

For the Topping (Optional):

  • Whipped cream or vanilla ice cream, for serving


Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C).

  2. Prepare the pie crust: If using refrigerated pie crusts, follow the instructions on the package for blind baking. If using homemade pie dough, roll it out and place it into a 9-inch pie pan.

  3. Blind bake the crust: Line the crust with parchment paper and add pie weights or dried beans. Bake for 10 minutes. Remove the parchment paper and weights, then bake for an additional 5-7 minutes until golden brown. Let the crust cool completely.

Prepare the Strawberry Filling:

  1. Make the syrup: In a medium saucepan, combine the sugar, cornstarch, lemon juice, vanilla, and a pinch of salt. Stir in 1 cup of water. Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear, about 3-4 minutes.

  2. Add the strawberries: Add the halved strawberries to the syrup and cook for another 2-3 minutes, stirring gently to coat the berries in the syrup.

  3. Cool the filling: Remove the saucepan from the heat and let the filling cool to room temperature for about 10 minutes. It will continue to thicken as it cools.

Assemble the Pie:

  1. Fill the pie crust: Pour the cooled strawberry filling into the prepared pie crust, spreading it out evenly.

  2. Chill: Refrigerate the pie for at least 3 hours, or until the filling has set and is firm enough to slice.

Serve:

 

  1. Garnish and serve: Once chilled, slice the pie and serve with whipped cream or a scoop of vanilla ice cream, if desired. Enjoy!


Notes

  • Use fresh strawberries for the best flavor, but frozen strawberries can work in a pinch if fresh ones aren’t available.

  • If you prefer a sweeter pie, add more sugar to the filling or top it with extra whipped cream.

  • For a no-bake version, you can use a graham cracker crust instead of a traditional pie crust.
