Instructions
- Make the crust: Preheat oven to 350°F (175°C). Mix cookie crumbs and melted butter. Press into a 9-inch deep dish pie plate or springform pan. Bake for 10 minutes and let cool.
- Make the brownie layer: In a medium bowl, melt butter. Stir in sugar, eggs, cocoa, flour, salt, and vanilla. Pour over the crust and bake for 20–22 minutes, or until set. Let cool completely.
- Make the pudding: In a saucepan, whisk sugar, cocoa, cornstarch, and salt. Gradually whisk in milk. Cook over medium heat, stirring constantly, until thickened (about 7–9 minutes). Remove from heat, stir in chopped chocolate and vanilla. Let cool slightly, then pour over the brownie layer. Chill until firm, at least 4 hours.
- Make the topping: Whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread over chilled pudding layer.
- Garnish with chocolate shavings or crushed cookies. Chill until ready to serve.
