  • 2 flatbreads or naan (store-bought or homemade)

  • 1/3 cup basil pesto

  • 1 cup fresh baby spinach, roughly chopped

  • 1/2 cup shredded mozzarella cheese

  • 1/2 cup shredded provolone cheese

  • 1/2 teaspoon crushed red pepper flakes (optional)

  • Olive oil, for brushing

  • Salt and pepper, to taste

Instructions

  2. Place flatbreads on a baking sheet and lightly brush with olive oil.

  3. Spread a generous layer of pesto over each flatbread.

  4. Top with chopped spinach, then sprinkle on mozzarella, provolone, and Parmesan cheeses.

  5. Season with a little salt, pepper, and crushed red pepper flakes if using.

  6. Bake for 8–10 minutes, or until the cheese is melted and bubbly and the edges are golden.

  7. Slice and serve warm!

Notes
