Description

This Tomato Avocado Sandwich is the perfect combination of creamy avocado, fresh tomatoes, and flavorful seasonings, all nestled between two slices of soft bread. It’s quick, healthy, and super satisfying, making it an ideal lunch or snack!


Ingredients

  • 2 slices whole-grain or sourdough bread

  • 1 ripe avocado

  • 1 medium tomato, sliced

  • 1 tablespoon mayonnaise or Greek yogurt (optional)

  • 1 teaspoon lemon juice

  • Salt and pepper, to taste

  • 1 teaspoon olive oil (optional, for toasting bread)

  • Fresh basil or lettuce (optional, for extra flavor)


Instructions

  • If desired, lightly toast the slices of bread in a pan or toaster for a crispy texture.

  • In a small bowl, mash the ripe avocado with a fork. Add lemon juice, salt, and pepper to taste. Mix well until smooth.

  • Spread the mashed avocado mixture evenly on one slice of bread.

  • Layer the tomato slices on top of the avocado. Season with a pinch of salt and pepper.

  • Optionally, spread mayonnaise or Greek yogurt on the other slice of bread for extra creaminess.

  • Add a few fresh basil leaves or a handful of lettuce on top of the tomato slices for added crunch and flavor.

 

  • Close the sandwich, cut it in half, and serve immediately.


Notes

  • For extra protein, you can add a boiled egg or some grilled chicken.
