For the Soup:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups water
- 1 can diced tomatoes
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 bay leaf
- 8 oz tortellini
- 2 cups fresh spinach
Instructions
- Saute Aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add Broth and Vegetables: Pour in the broth, water, tomatoes, carrots, celery, oregano, basil, salt, pepper, and bay leaf. Bring to a boil.
- Cook Tortellini: Add tortellini to the pot and cook according to package instructions.
- Finish Soup: Stir in fresh spinach and cook until wilted. Remove bay leaf before serving.

- You can customize this soup by adding your favorite vegetables or protein.
