Description

For the Soup:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 1 can diced tomatoes
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 bay leaf
  • 8 oz tortellini
  • 2 cups fresh spinach

Instructions

  1. Saute Aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  2. Add Broth and Vegetables: Pour in the broth, water, tomatoes, carrots, celery, oregano, basil, salt, pepper, and bay leaf. Bring to a boil.
  3. Cook Tortellini: Add tortellini to the pot and cook according to package instructions.
  4. Finish Soup: Stir in fresh spinach and cook until wilted. Remove bay leaf before serving.
