These White Chocolate Blueberry Crumble Bars are a delicious layered treat made with a buttery oat crust, sweet blueberries, and creamy white chocolate. Perfect for dessert or a sweet snack.

- 1 cup all-purpose flour
- 1 cup old-fashioned oats
- 1/2 cup brown sugar, packed
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1 1/2 cups fresh or frozen blueberries
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1/4 cup granulated sugar
- 1/2 cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix flour, oats, brown sugar, baking soda, and salt.
- Stir in melted butter until the mixture is crumbly.
- Press two-thirds of the crumble mixture into the bottom of the prepared pan to form a crust.
- In another bowl, combine blueberries, cornstarch, lemon juice, and granulated sugar. Stir to coat evenly.
- Spread the blueberry mixture evenly over the crust.
- Sprinkle white chocolate chips over the blueberries.
- Top with the remaining crumble mixture.
- Bake for 35–40 minutes, or until the top is golden and the blueberries are bubbling.
- Cool completely before cutting into bars.
Notes
- Use parchment paper for easy removal and cleanup.
- Frozen blueberries can be used without thawing.
- Store bars in an airtight container at room temperature for up to 3 days.
